DYK Columbia is home to one of the oldest recorded recipes for pimento cheese? Printed in the 1912 cookbook A Friend in Need, it calls for a can of “pimentoes,” 1-2 cups of grated cheese, mayo + “a little finely chopped sour pickle.” Pimento Cheeseburgers also hail from Columbia; being served up since 1954.
