TryThis: COA Agaveria’s new vegan menu

It’s Taco Tuesday, friends – and we’re here to spill the beans on COA Agaveria ’s just launched vegan menu .

Many of our readers frequently request suggestions for menus that cater to dietary restrictions, so we decided to be y’alls guinea pig. Here’s what we tried:

Ensalada de betabel | $10

Roasted beets, arugula, heirloom tomato, onion, avocado, lemon arbol vinaigrette

It was different (read: you need an acquired taste for beets) – and very much on the lighter side. So if you’re looking for a unique, fresh salad starter, this will do.

Taquitos de Jamaica | $8

Sauteed hibiscus in chipotle, fried corn tortilla, cashew queso, pico

You read that right… sauteed hibiscus. But don’t knock it ‘til you try it. The hibiscus – which could totally pass as shredded chicken (at first, *quick* glance) – makes the dish a little sweet tasting. We were pleasantly surprised.

Envolturas de lechuga | $9.50

Beyond meat chorizo, pico, creamy guacamole, lettuce wrap

Beyond meat = beyond delicious. And the lettuce wraps cut the carbs (and gluten) of a flour tortilla shell. This was, arguably, the entire group’s favorite menu item.

Tasty as fit taco bowl | $14.50

Romaine lettuce, poblano rice, black beans, wild mushrooms, charred corn, pico, guacamole

Think Chipotle… but make it vegan (and not coming from a chain). The taco bowl, inspired by the Cola wellness expert behind Tasty As Fit , has a little of everything you need + is more than enough to fill you up.

Ceviche de coliflor | $10.50

Citrus marinated cauliflower, tomato, onion, cilantro

Unfortunately, this takes a little longer to make, so we didn’t get to try it – but with as good as everything else was, we’re certain it’ll meet expectations.

And of course, no trip to COA is complete without a couple signature cocktails – which are not *technically* listed as vegan. But just in case you need a rec here, we’ve got you.

Mula Tapatia | Luna Azul Blanco, ginger syrup, cucumber, lime, ginger beer

Hibiscus Margarita | Luna Azul Blanco, citrus, hibiscus

La Cosecha | Luna Azul Blanco, ancho reyes, creme de cassis, agave nectar, basil, lime
