How to be #GlutenFree in Cola

Let’s start by answering the real question here: WTH is gluten? Gluten is the protein compound that helps foods maintain their elasticity + shape. It’s found in wheat, rye, barley, and any crossbreeds of those grains.

Why go gluten-free? Recent diet fads (ahem, paleo) seem to antagonize gluten. A common misconception is that a gluten-free diet is a healthier diet for everyone. However, doctors only recommend cutting out gluten if you have been diagnosed with celiac disease (a.k.a. gluten tears up your gut).

Gluten-free (a.k.a. GF on a lot of menus) may not always be the easiest choice, but it can definitely be just as (if not more) delicious than options containing gluten.

But: Don’t think for one second that a gluten-free diet is always super healthy – just try the gluten-free burgers options at Smashburger 🍔... On the other hand, if you want a lighter option, try Bourbon’s Roasted Vegetable Platter. (It’s just as tasty, I promise.)

Last week, I discovered that Publico offers their tacos in lettuce wraps (obviously GF) – and DYK that a ton of local pizza places offer GF crust? Like Mellow Mushroom, Old Chicago + Uncle Maddio’s.
