¡Hola, Columbia! Jess here checking in on this Taco Tuesday.

2020 has thrown a few wrenches in our spring plans; however, how often does Cinco de Mayo happen on a Taco Tuesday? Taco bout a good time, am I right? Tacos are my favorite food group and I am ready to fiesta with a taco in each hand. Have no fear your dinner plans are here + it’s nacho problem to do anything but try to decide which tacos to order. Restaurants are offering specials today – so here are cinco options to help you get your taco fix in.

Let’s guac and roll

4-5 avocados

Approx. ½ small red onion, diced

Approx. ¼ tomato, diced

Lime juice from one large lime

Salt, pepper, cumin, garlic powder, onion powder to taste

Chili powder, to taste (I like the chili lime seasoning from Trader Joes)

Cilantro (optional, to taste. I use approx. ¼ cup)

In a large bowl, mash avocados (I leave it a little chunky). Dice tomatoes + red onion and stir in. Squeeze lime juice into the mix and add seasonings to taste (If you like a bit of spice, don’t be afraid to go heavier on the cumin and chili powder). Chop cilantro and mix in if desired.
